Dropping glute (as an experiment) was probably the most life-changing dietary change for me. There were a lot of subtle changes in digestion, pain and mental clarity for me that made it a permanent part of my life. Also, flours are prepared foods. If you have to grind the flour yourself, I suspect you would lose interest quickly. All the best.

Great work mate. I have the opposite problem - summer is really, really difficult to get outside. It is absolutely scorching and very uncomfortable. I hate the gym (artificial lights, the music, mirrors) and prefer to be outside, so it is a struggle.

You may be surprised to experience appetite suppression properties of going gluten-free. Also, you could experience better digestion and benefits of a general reduction in subclinical inflammation. You won't know till you do it.
Look into the benefits of gluten (glutenin and gliadin proteins) removal from your diet. It’s worth a two-week experiment.
